→ Slider Assembly

18 - 8 slider buns
19 - 1 cup arugula or baby spinach
20 - 1 small red onion, thinly sliced
21 - 1-2 tbsp olive oil

# How to Make It:

01 - Rub the steak with olive oil, salt, and pepper. Let rest at room temperature for 15 minutes.
02 - In a bowl, combine softened butter, garlic, lemon juice and zest, Dijon, Worcestershire, paprika, cayenne, herbs, red pepper flakes, and salt. Mix until smooth and set aside at room temperature.
03 - Heat a grill pan or skillet over high heat. Sear steak 3-4 minutes per side for medium-rare, or until desired doneness. Rest for 5 minutes, then slice thinly against the grain.
04 - Brush slider buns with olive oil and lightly toast in a pan until golden.
05 - Spread cowboy butter generously on both sides of each bun. Layer with arugula, sliced steak, and red onions. Top with bun lids.
06 - Serve immediately, warm.

# Expert Advice:

01 -
  • The cowboy butter creates this incredible velvety sauce that clings to every bite of steak
  • These sliders disappear faster than anything else I serve at gatherings
  • You get restaurant quality flavor in under 40 minutes start to finish
02 -
  • Slicing against the grain is absolutely non negotiable here, or your steak will be tough and chewy instead of tender
  • Room temperature steak cooks more evenly, so do not skip that 15 minute rest after seasoning
  • The cowboy butter needs to stay soft enough to spread, so do not let it get too cold in the fridge before serving
03 -
  • Let the cowboy butter soften completely on the counter for at least 30 minutes before mixing, or it will be lumpy and hard to spread
  • Pat your steak completely dry before seasoning if it has been sitting in packaged meat juices, or it will steam instead of sear
