01 - Peel and core apples, then cut into thick fry-shaped sticks approximately 1/2 inch wide. Toss immediately with lemon juice to prevent browning.
02 - Arrange three shallow bowls: place flour in the first, beaten eggs in the second, and mix panko breadcrumbs with cinnamon and salt in the third.
03 - Dredge each apple stick in flour, shaking off excess. Dip into beaten eggs, then press into panko mixture to coat evenly on all sides.
04 - Heat 1 inch vegetable oil in deep skillet to 350°F. Fry apple fries in batches, turning occasionally, until golden brown and crispy, about 2-3 minutes per batch. Transfer to paper towels to drain.
05 - Place granulated sugar in medium saucepan over medium heat. Cook without stirring, swirling pan occasionally, until sugar melts and turns deep amber color.
06 - Remove from heat and immediately stir in butter until melted. Carefully whisk in heavy cream—mixture will bubble vigorously. Stir in sea salt and let cool slightly.
07 - Arrange fried apple fries on large platter or wooden board. Place warm caramel sauce in small bowl at center. Surround with marshmallows, pecans, chocolate chips, graham cracker crumbs, and fresh berries.
08 - Dust apple fries generously with powdered sugar. Serve immediately while fries remain crispy and caramel sauce is warm.
